Pulsed Electric Field(PEF) Sterilization is achieved through the electric field,the higher electric field strength,the better bactericidal effect and inactivation effect of enzymes.Due to the conductivity of fruit and vegetable juices,milk and other liquid food is much higher than that of water,a rapid-increasing current is lead when liquid food passes through the PEF chamber.
