Studies on physico-chemical and cookability characters of different germplasm of velvet bean (Mucuna pruriens var.utilis) was conducted and observed significant variations (p<0.05) for all the investigated traits.The germplasm Mundanthurai (white-coloured) showed favourable physico-chemicaltraits and exhibited lowest grain weight (100.29g).In general,seed weight had highly significant positive correlation with seed volume (r =0.818,p < 0.01); swelling capacity (r =0.699,p < 0.01) and hydration capacity (r =0.684,p < 0.05).
