The antioxidative activity of batata was evaluated and compared with that of VC and gallic acid.The antioxidant action of the batata polyphenols towards superoxidized anionic radicals,hydrogen peroxide,hydroxyl radicals,DPPH free radicals,lipid radicals and organic peroxide radicals was tested,appraised of antioxidative action of three.Results showed that they all showed the strong power of the antioxidant action.
