An aqueous enzymatic method was developed to extract oil and recover protein hydrolysates from almond simultaneously.Combinations of enzymatic treatments were compared according to the composition of almond slurry.Four fractions,namely free oil,emulsion,pomace and aqueous phase were obtained after centrifugation.Oil distribution in different fractions was determined.Pomace fraction was washed with NaOH solution and emulsion phase was demulsified by freezing/thawing treatment respectively to recover oil and protein hydrolysates.
