The object of this article is mainly to research the change of volatile base nitrogen and peroxide number of zein films in different storage conditions.And zein films and normal plastic materials are used to pack deep-frozen glutinous rice ball.The results showed that zein films in frozen storage have less volatile base nitrogen and peroxide number than zein films in cold storage and normal storage in same storage time.Zein films which packed deep-frozen glutinous rice ball could control deep-frozen glutinous rice balls relative moisture loss and microbe gross better than normal plastic materials,but the differences were minor.
