蚕蛹复合氨基酸营养价值的研究

按AOAC大鼠生长试验法和化学测定法,分析了蚕蛹复合氨基酸的组成及其营养价值。蚕蛹复合氨基酸所含必需氨基酸占氨基酸总量的61.20%,除苏氨酸和赖氨酸含量偏低外,其它必需氨基酸量均高于全鸡蛋蛋白质的氨基酸含量。化学分59,必需氨基酸指数80.1,生物学效价76,营养指数50。动物生长试验表明蚕蛹复合氨基酸有促进幼年大鼠正常生长的作用,体重增长呈直线上升趋势,蛋白质功效比值2.45±0.28。结果提示蚕蛹复合氨基酸是一种具有较高营养价值、无需经过消化而易于吸收利用的优质氮源。 According to AOAC rat growth test and chemical assay, the composition and nutritional value of the compound amino acids of silkworm cocoon were analyzed. The content of essential amino acids in the composite amino acids of silkworm cocoon accounted for 61.20% of the total amino acids. Except that the contents of threonine and lysine were low, the amount of other essential amino acids was higher than that of whole egg protein. Chemical score 59, essential amino acid index 80.1, biological valence 76, nutritional index 50. Animal growth tests showed that cocoon complex amino acids had the effect of promoting normal growth in young rats, and weight gain increased linearly with a protein efficacy ratio of 2.45±0.28. The results suggest that the cocoon complex amino acid is a high-quality nitrogen source with high nutritional value that can be easily absorbed and utilized without digestion.
