In order to explore new avenue of keeping fresh-cut fruits and vegetables fresh, effects of different concentrations of methyl jasmonate (MeJA) treatment on physiological and biochemical of fresh-cut pears storaged at room temperature.The results showed that the contents of reducing sugar, total sugar, Vc, protein of fresh-cut pears during storage increased first then decreased, a serious loss of nutrients composition of fresh-cut pears was storaged 4d later, the rate of water loss was increased significantly, the content of polyphenol decreased, the activities of polyphenol oxidase (PPO) and peroxidase (POD) showed increasing then decreasing repeatedly.And the contents of reducing sugar, total sugar, Vc, protein and polyphenol of fresh-cut pears treated MeJA increased significantly, the activities of PPO, POD and the rising of water loss rate inhibited, especially 1 μmol/L MeJA treatment was more effective to keep the fresh-cut pears better storage quality.
