ICEF congresses held every 4 years for the last 40 years are the oppoormity to visualize the trends and driving forces behind research in food process engineering.ICEF 10 held in April 2008 in Vi(A)±a del Mar,Chile congregated representatives of many research teams working in the area of food process engineering in over 40 countries of the world.A major conclusion is that the field is moving closer to the desires and needs of consumers,thus,providing products that are increasingly tailored-made at satisfying these needs.
