The flavonoid was extracted from buckwheat sprouts with 95 % ethanol.The content of total flavonoid,rutin and quercetin in buckwheat sprouts was analyzed by high performance liquid chromatography(HPLC)and aluminium nitrate colorimetry,respectively.Moreover the radical-scavenging activity against the 1,1-diphenyl-2-picylhydrazyl free radical(DPPH)and the antioxidant activity of the flavonoid extracts were determined.The results showed that the content of total flavonoid,rutin and quercetin all significantly varied during seed germination,and the total flavonoid content of buckwheat sprouts reached the highest level on the 9th day.The flavonoid extract of buckwheat sprouts exhibited strong DPPH radical-scavenging activity and antioxidant activity.The activity was gradually enhanced as seed germination time prolonging,and was the strongest on the 9th day,and the effect of tartary buckwheat(Fagopyrum tararicum Gaertn)was stronger than that of common buckwheat(Fagopyrum esculentum Moench).
